Soybean Oil Processing Byproducts and Their Utilization
Refining of soybean oil, to make a neutral, bland-flavored, and light-colored oil, results in several by-products. The by-products consist of various mixtures of phosphatides, unsaponifiables, glycerides, free fatty acids, and soap. Lecithin contains mostly hydratable phosphatides, together with some free fatty acids and neutral oil (glycerides).

Practical Handbook of Soybean Processing and Utilization
Publisher Summary. Soybeans are very important in the world production of oilseeds. Soybean dominance comes from a variety of factors, including favorable agronomic characteristics, reasonable returns to the farmer and processor, high-quality protein meal for animal feed, high-quality edible oil products, and the plentiful, dependable supply of soybeans available at a competitive price.
It is the most widely used oil in the World, and is sold as either pure soybean oil or as a main ingredient in vegetable oil. Processed into margarine and shortenings, soybean oil's 85 percent unsaturated fat profile is among the highest of the vegetable oils. - Where is soybean produced in South Africa?
- Production perspective Soybean is produced throughout the country, but significant production takes place in the Free State and Mpumalanga provinces. South African soybean production has always varied throughout the years, but mostly above the domestic demand (see Graph 1 ).
- What are traditional processing techniques for soybean products?
- Traditional processing techniques such as heat treatment, fermentation, enzyme catalysis and glycosylation play a crucial role in improving the nutritional, sensory characteristics and health-promoting features of soybean products. An overview of some common traditional processing technologies for SPs is shown in Fig. 3.
- Does South Africa still import soybean oil?
- Despite the increasing levels of soybean production, South Africa still imports considerable volumes of soybean oilcake and oil, and there is still considerable scope for production increases in order to substitute these imports. In fact, South Africa¡¯s domestic soybean production is only a third of the country¡¯s crushing capacity.
- Does South Africa export soybean oilcake?
- South Africa is a small player given the soybean oilcake export market. In the past five years the industry has exported an average of 39 443 tons of oilcake.
