Developing functional relationships between temperature and soybean
The effect of temperature on soybean seed quality and composition is incompletely understood. In general, soybean cultivars acclimated to southern growing environments showed higher protein and lower oil content compared to cultivars and environments in the US Midwestern environments (Rotundo & Westgate, 2009; Valliyodan & Nguyen, 2012).
This work demonstrated that is possible to process soybean expeller samples at relatively low temperature and at 40 MPa of CO 2 pressure obtaining innocuos extracts with antioxidant activity. Extraction curves obtained in this work ( Fig. 2 , Fig. 3 , Fig. 4 ) are clearly divided in three stages following extraction mechanisms described by Da Silva et al. [ 16 ].
