Abstract. This chapter focuses on the extraction of oil through ultrasound-assisted enzymatic extraction from various oilseeds such as walnut, peanut, perilla seeds, and soybean. The nutritional benefits of these oilseeds including the traditional practices of oil extraction from these oilseeds have also been discussed.
