Production of stearate-rich butters by solvent fractionation
Solvent fractionation of high stearic–high oleic sunflower oil was optimised in function of the oil/solvent ratio and temperature. Sunflower stearins with similar melting profiles as cocoa butter were obtained from oils of either 17% or 20% stearic acid in a single step.
Seed oils from new recombinant high-stearic sunflower lines (Helianthus annuus L.) have been characterized and the concomitant reduction in triunsaturated TAGs was reduced to levels as low as 8.4% in CAS-29, as opposed to the 67.9% that they constitute in the standard line RHA-274.
High stearic sunflower oil: Latest advances and applications
Industrial extraction of typical high stearic sunower oils yields 10 to 16% of stearin. These fl stearins contain between 30 to 40% of disaturated TAGs and only traces of trisaturated ones, and so constitute plastic fats with applications in baking, llings and margarine formulation fi (Tab. 2, Bootello et al., 2011).
The Journal of the American Oil Chemists' Society publishes original research and technological advances on fats, oils, oilseed proteins, and related materials. Abstract The separation and purification of linoleic acid (LA) from sunflower seed oil by urea complex fractionation was studied.
Effect of solvents on the fractionation of high oleic–high
Solvent fractionation of high oleic–high stearic (HOHS) sunflower oil was studied to determine the best solvent to use (hexane or acetone) in terms of the operational parameters and properties of the final stearins. Acetone fractionation on two types of HOHS sunflower oils (N17 and N20) was carried out at temperatures from 5 to 10°C using

- What are high oleic and high stearic sunflowers?
- Amongst them, the most remarkable have been high oleic and high stearic types. High stearic sunflower lines reported to date have been produced by traditional methods of breeding and mutagenesis. The mutations affected the expression of enzymes responsible for stearate desaturation in developing seeds.
- Is sunflower oil rich in linoleic acid?
- Regular sunflower oil is rich in linoleic acid. To improve its properties for different applications several genotypes with modified fatty acid compositions have been developed. Amongst them, the most remarkable have been high oleic and high stearic types.
- What is the difference between sunflower oil and seed oil?
- Sunflower oil is rich in linoleic and oleic fatty acids, making this oil more unstable at high temperatures than other oils such as olive and peanut . Seed oil with high linoleic acid contents is suitable for biofuel production, and high contents of oleic acid make this oil suitable for food uses . … …
