Effect of degumming process on physicochemical properties
The effect of different degumming processes on physicochemical properties of crude sunflower oil was studied by means phosphorous content, acid value, peroxide value, phospholipids, iron, moisture, unsaponifiable matter, viscosity, density and color value. Crude oil, either water degummed or not, is treated by an acid, usually phosphoric acid, citric acid or malic acid in the presence of water. For oils containing relatively low amounts of NHP (e.g. sunflower oil) this process can lead to degummed oil with a lower residual phosphorus content (5 to 30 ppm) than water degumming.
The most effective degumming process was TOP degumming, that allowed to decrease the amount of phosphorus in pressed rapeseed oil to 9.6 mg kg-1 and in pressed sunflower oil to 4.5 mg kg-1. In
Influence of Chemical and Physical Refining Processes on
For the physical refining process, crude sunflower oil was degummed using the TOP degumming method. In this process, the oil was treated with 0.3% w/w phosphoric acid (75% w/w), and the H3PO4 was neutralized with 0.15% w/w sodium hydroxide (40% w/w).
The data obtained for viscosity showed that crude sunflower oil exhibited the highest resistance to flow with a viscosity value of 48.63±2.65 mPa*s, while enzymatic degummed oil samples showed the least data with no significant differences between them. The water treatment exhibited a least reduction, but it was significant statistically.
